Cacio e Pepe but not actual Cacio e Pepe
5 mins prepServes 2
This recipe is inspired by the creamy Cacio e Pepe from Rosemary Chicago, featuring a twist with the addition of crème fraiche for a rich sauce. It's a quick and easy pasta dish that comes together in about 20 minutes.
Bring a pot of salted water to a boil. Once boiling, begin cooking your pasta. In a skillet on medium heat, add oil and melt 2 tbsp of butter. Add crushed black pepper and toast. Drop the heat to low and slowly add two ladles of pasta water into the pan. Increase the heat to medium low, Stir and bring to a simmer until it becomes a glossy combined sauce. Add cooked pasta and toss. On low heat add in crème fraiche and stir. Turn off the heat and begin to add in pecorino and parmesan cheese. Add in a handful at a time and toss. Once all the cheese is added, add the last tablespoon of butter. Toss. If the sauce is too thick add in an additional ladle or Half ladle of pasta water. Garnish with extra pepper and pecorino. Serve and enjoy.
